Apple Nachos


I posted this picture on Instagram a couple weeks ago and was shocked at the huge response it got. I guess I shouldn’t have been, I was equally intrigued when I saw it on Pinterest. Which means alas, I cannot take credit for this genius idea. It’s so basic but so adorable and I find myself making it all the time as a late night snack. I can convince myself that because it’s mostly fruit, it must be healthy!

On the menu:
Apple nachos
Serves 1 – 2

1 large apple
3 Tbsp peanut butter
3 Tbsp craisins
2 Tbsp chocolate chips

Quarter the apple and cut out the core. Slice each quarter into 1/4 inch thick slices and fan out on a plate. Melt the peanut butter in the microwave for one minute until liquified. Sprinkle craisins and chocolate chips over the apple slices and then drizzle the peanut butter. Eat your face off.

PB&J Oatmeal Breakfast Bars


I don’t know too many people who like preparing elaborate breakfasts on weekday mornings, including me who is sans day job at the moment. I prefer cereal and the occasional bagel if I have an extra minute. But The BF grabs whatever is handy and races out the door, eating later at his desk while checking email. He’s not a big fan of hot oatmeal and one can only eat bananas for so many meals, so I decided to try and come up with something that he’d look forward to eating but that also didn’t start his day off with a total calorie fest. I found these incredible and surprisingly healthy breakfast bars on “Oh She Glows” (don’t worry, guys, men can eat these, too) and added a few things to make them BF-friendly.

On the menu:
PB&J Oatmeal Breakfast Bars
Makes 9 large squares (you can cut them smaller if you like)

2 1/2 cups rolled oats (not instant), divided
3 Tbsp chia seed
1/2 cup plus 1 Tbsp ground flax seed
1 tsp cinnamon
1 tsp baking powder
1/4 tsp salt
1 1/2 cups milk (use soy milk or almond milk to make these vegan)
1 Tbsp honey
1/2 cup peanut butter
1 ripe banana, chopped into 1/2 inch chunks
1 Tbsp vanilla extract
1 Tbsp orange juice
1/4 cup raspberry jam

Preheat oven to 350 degrees and line an 8 x 8 inch pan with parchment paper.

Blend 1 cup of rolled oats in a blender or food processor until it forms a fine flour (you can skip this by buying oat flour and just using 1 cup of it). Add oat flour, remaining 1 1/2 cups of rolled oats, chia seed, flax seed, cinnamon, baking powder, and salt to a large bowl and whisk until combined.

In a separate bowl, whisk together milk, honey, peanut butter, banana, and vanilla until combined (obviously the chunkier ingredients won’t fully combine but do the best you can). Add this bowl to the dry ingredients and mix until combined. Pour into the prepared pan and smooth over so the batter is even.

In a small saucepan, combine orange juice and jam. Over low/medium heat, cook until the mixture becomes smooth with no lumps. Pour the hot jam over the batter in the pan until the bars are completely covered.

Bake for 35 – 40 minutes. Let cool on a wire rack for 10 minutes and remove from the pan. Let fully cool before cutting into squares.

Note: You could do virtually anything you want with these bars. I was thinking a pumpkin pie oatmeal bar would be to die for, with the addition of a cup of pumpkin puree, 1 tsp nutmeg, 1 tsp all spice, and maybe a crumble of brown sugar on top (removing the jam and PB and banana, of course). Still just as healthy as the above recipe and a completely different taste.

Mid-Week Comfort Food

Sometimes when things are stressful in life, in work, whatever, I come home and I want to cook but then I see the loaf of potato bread, the jar of peanut butter, and the ripe banana and I think, “Mom would totally let me have this for dinner right now.” This sandwich is a glorified and indulgent take on your standard PB&B (that’s peanut butter and banana for those of you not so quick on the uptake) and is more dessert than dinner but why the heck not?

The recipe is simple and the results are faaaantastic. Just make your standard peanut butter and banana sandwich to start.
Next, melt 2 Tbsp of butter in a frying pan and fry the sandwich on both sides for around 4 minutes, or until the bread browns.
In a shallow plate, mix together 2 Tbsp of sugar and 1 tsp of ground cinnamon. Once your sandwich is fried, dip it in the cinnamon sugar so both sides are coated.

And voila. Now… isn’t that better?

Food Cart Friday!

In my opinion, and from what I’ve read online and in newspapers, New York is behind in the food cart trend. Sure, we have lots of halal food, cupcakes, falafel, and chicken and rice, but where is our creme brulee cart? Our bacon dog cart? Our gumbo cart? All in due time, I’m sure. For now, I’ve done a little research into the tastiest midtown food cart options in Manhattan. And no better day than Friday to treat myself to a little fried fish and some cookies.

Kim’s Aunt Kitchen Cart: 46th Street between 5th Avenue and 6th Avenue (closer to 6th Ave, south side of the street) I decided to try Kim’s Aunt because most websites claimed that the fish was fresh and made to order, quelling two of my food cart fears. Who wants to eat food that’s been sitting in a grease pit for hours? Not this girl.

On the menu:
Flounder sandwich (fried flounder pieces, tomato, lettuce and white sauce on standard white bread)

Verdict: YUM. Oh, beautiful fried fruit of the sea. While the bread got soggy in the ten minute walk from the cart to my warm little office, I barely even noticed. The coating on the huge chunks of fish was crispy, the flounder inside was flaky and tender, and the veggies were crisp and fresh. You can’t get much in midtown Manhattan for $4.50 but this sandwich will fill you up and keep you full straight through the 3:00 office slump. Props to you, Kim’s Aunt, whoever you are.

Treats Truck: in some sort of sneaky PR move, or perhaps just to keep the population of midtown from gaining a collective five pounds, the Treats Truck moves! Their schedule can be found on their website, but for the past few Fridays they’ve been stationed on 45th Street and 6th Avenue from 12:30 – 3. Uh… or so I hear.

On the menu:
Double chocolate sandwich cookie with mint chocolate filling
Chocolate chip cookie
Vanilla sandwich cookie with vanilla filling
Double chocolate sandwich cookie with chocolate fudge filling
Double chocolate sandwich cookie with peanut butter filling
NOTE: I did not eat all of these cookies in one sitting, nor did I buy them all on one day. And this was strictly for research purposes. It’s a tough job reviewing cookies. Honest.

Verdict: Why hello there, brand new love of my life. This is my kind of cookie. The chocolate sandwich cookies had the PERFECT consistency: crisp on the edges, chewy in the middle. The vanilla sandwich cookie had a crispy texture all the way through, which is not MY favorite, but I’m sure some would disagree with me. And the chocolate chip was standard fare but delicious none the less. As you can probably tell… I recommend the chocolate sandwich cookies. And anything with frosting is alright with me.

If you have a New York food cart recommendation, lay it on me! Is there a creme brulee cart that I’m missing? Maybe it’s best if I don’t know about that one.

Summer?! Is that you?!

Not quite. But today is warm and sunny in New York City (70 degrees!) and all I can think about is lemonade, ice cream, corn, grilled burgers and shrimp… It might still be March but my stomach says summer.

I’m blowing this popsicle stand early this week, but I leave you with this, dear readers: peanut butter banana chocolate chip milkshakes. You heard me.

This is not my photo, nor is it my recipe (many thanks to The Kitchn for always supplying inspiration when I have none), but can you blame me for cutting and pasting this beauty? Fix a diving board to the side of that glass and I’d swim in it.
