I’m about to tell you a story, but in order to read it, you’re going to have to put your judgment face away and slap on an open minded grin.
Got it?
Okay, here goes. I ate pancakes 3 days in a row. I can’t explain it. I needed something comforting and warm and salty and sweet and when I got home last night it was beautiful and snowy and I thought, “What else do people eat when it’s cold and snowy and Christmastime but pancakes?” I couldn’t come up with anything. So I made these. And they have a secret.
HEY. Remember when I told you not to judge me? Pancakes with bacon sounded good, so I thought, I will combine these beauties into one easily consumed dish.
I started by crisping up the bacon real nice, setting it aside to drain, pouring the grease out of the pan, and then making the pancakes (using this recipe*, obviously) in that same beautiful pan all ready to go and coated with bacon grease. Once I poured the batter in the pan I laid the crispy strips in the center of the pancake and cooked as usual.
Then for the sauce: I cubed some apple and sauteed it in a small saucepan with 2 Tbsp of butter, 1/4 cup pure maple syrup, and 2 tsp of cinnamon. Once the apples are softened, you pour the mixture on top of the pancakes.
And then you eat your face off. Or you share. But… probably the former.
*I realized upon arriving home that I was out of baking powder. I said a few curse words, looked out at the snow, and then remembered I could make my own. 2 parts cream of tartar to 1 parts baking soda = baking powder. (For example: in this recipe you need 3 tsp of baking powder, so instead you’d use 2 tsp cream of tartar and 1 tsp baking soda) A handy trick for you in case you’re ever in the same predicament.

You sound like my son who is also a pancake junkie. He’s 16 and would eat pancakes morning, noon, and night if I made them that often for him. And he loves apples, apple sauce, apple pie, fried apples, etc.
That bacon inside is a dandy little trick that I might just have to try. I usually make pancakes on Sunday. I try to make lots of extra to have for the week. They make a great snack, too, when you just want something “comforting” to eat. I’m with you! And there was no judging here whatsoever. Eat on, girl!

There are absolutely no logical arguments against pancakes. I just had one. Yet this recipe sounds like even more than pancake… a hyper-pancake, so to say. I’ll have to copy it.

I just saw an Ina Garten show where she went to England and had bacon sandwiches. Just thick, toasted bread and bacon, nothing else. She and her husband enjoyed them and of course she made her version at home. Bacon seems to be a universal yummy snack that goes well with everything . . . or almost nothing, lol!

Actually, I think it’s a fairly balanced meal — meat/protein, grain/bread, and fruit. It might not be in perfect proportion, and could be a little bit heavy on fat or salt or sugar, but I think it’s a good idea.

OR cheesy scrambled eggs and honey!
OR, if you just want the sweet, lots of lemon juice with sugar! makes it taste just like lemon cake.

They look delicious… pancakes are one of my favourite breakfasts… I drizzle on it some honey and sprinkle some cinnamon, the besssstttt… One more thing, you said, you ate pancakes 3 days in a row , well, it’s a normal thing to me ‘coz we make a whole big batch that is enough for 4 – 5 days, and even the last day, I cant have enough… So you did gooooddd….. it is a comfort food…

well, just so you know, you dont really need baking powder to make great pancakes, eggs do just fine. in india, we have various kinds of pancakes, none of which use baking powder,….and they r still pretty great!

Bacon can make the world spin…..at least in my hubby’s eyes. While reading your post he had just returned from a boy’s lunch out and he had had a mixed grill and he was on cloud 9. You do need something you consider soul food in such cold weather. I’m going to keep this in mind and make them myself as I do have a little bacon in the deep freeze and 2 granny smiths too.
there are a lot of sweet and salty combinations in the German food culture, so this is no strange combination for me 😉

Here in Italy people don’t know pancakes, unless they’ve travelled abroad. I make them at least once a week, but I can’t eat them three days in a row:) Thank you for the baking powder tip, I need to keep a stock of cream of tartar, as I frequently run out of baking powder. Wow, that sounds good, although I really don’t eat bacon. I am partial to a sunny side up egg on my pancake with maple syrup over which my boyfriend thinks is gross. It’s too bad they don’t have IHOP here in the UK. Unfortunately I can’t eat them too often anyway as I have a bit of a wheat allergy, but I might be able to do it with gluten free flour! 🙂
