These Pancakes Have a Secret

I’m about to tell you a story, but in order to read it, you’re going to have to put your judgment face away and slap on an open minded grin.

Got it?

Okay, here goes. I ate pancakes 3 days in a row. I can’t explain it. I needed something comforting and warm and salty and sweet and when I got home last night it was beautiful and snowy and I thought, “What else do people eat when it’s cold and snowy and Christmastime but pancakes?” I couldn’t come up with anything. So I made these. And they have a secret.

HEY. Remember when I told you not to judge me? Pancakes with bacon sounded good, so I thought, I will combine these beauties into one easily consumed dish.

I started by crisping up the bacon real nice, setting it aside to drain, pouring the grease out of the pan, and then making the pancakes (using this recipe*, obviously) in that same beautiful pan all ready to go and coated with bacon grease. Once I poured the batter in the pan I laid the crispy strips in the center of the pancake and cooked as usual.

Then for the sauce: I cubed some apple and sauteed it in a small saucepan with 2 Tbsp of butter, 1/4 cup pure maple syrup, and 2 tsp of cinnamon. Once the apples are softened, you pour the mixture on top of the pancakes.

And then you eat your face off. Or you share. But… probably the former.

*I realized upon arriving home that I was out of baking powder. I said a few curse words, looked out at the snow, and then remembered I could make my own. 2 parts cream of tartar to 1 parts baking soda = baking powder. (For example: in this recipe you need 3 tsp of baking powder, so instead you’d use 2 tsp cream of tartar and 1 tsp baking soda) A handy trick for you in case you’re ever in the same predicament.

  1. YOU ARE MY HERO! I have an idea.. for our little reunion maybe we can just do champagne and pancake night at your house. No sit down dinner required. Thoughts?

I made, for the first time ever, banana pancakes… for Thanksgiving! They were fabulous. I am fully in support of breakfast food at times other than breakfast. Rock on.

  6. I loved your post!! You need to read my post that I wrote on sunday, it too is about pancakes. I went through an entire semester where I ate pancakes for breakfast every day, although none with bacon 🙂

  7. No harsh judgment imposed at any point in this post – I am on board! Looks delicious.

  8. You sound like my son who is also a pancake junkie. He’s 16 and would eat pancakes morning, noon, and night if I made them that often for him. And he loves apples, apple sauce, apple pie, fried apples, etc.

That bacon inside is a dandy little trick that I might just have to try. I usually make pancakes on Sunday. I try to make lots of extra to have for the week. They make a great snack, too, when you just want something “comforting” to eat. I’m with you! And there was no judging here whatsoever. Eat on, girl!

  9. I am so craving for pancakes right now 🙂

  10. Sounds very good – I like to pour warmed apple pie filling over pancakes. 🙂

  11. There are absolutely no logical arguments against pancakes. I just had one. Yet this recipe sounds like even more than pancake… a hyper-pancake, so to say. I’ll have to copy it.

  12. BACON MAKES ANYTHING AMAZING! damn what a cool idea.

  13. Oh My Gosh… THIS IS PERFECT! I am such a bacon-nista and I’m wondering why I didn’t come up with this. This is wayy better than a damn McGriddle lol. Love this. Nice recipe for the sauce.

  14. jule1

Wow, who would judge you? Some restaurant is going to read your post and add bacon/apple pancakes to their menu, lol!

I just saw an Ina Garten show where she went to England and had bacon sandwiches. Just thick, toasted bread and bacon, nothing else. She and her husband enjoyed them and of course she made her version at home. Bacon seems to be a universal yummy snack that goes well with everything . . . or almost nothing, lol!

  15. Hmmm…that definitely sounds interesting…I may have to give it a whirl 🙂

  16. Thats my favorite line….”Don’t judge me” Your post made me laugh 🙂 You never can go wrong with pancakes! Good job.

    You are so creative!

  18. Sounded great…so with the addition of sliced strawberries and a really good red tea, I’ve warmed up a cold holiday season’s evening. Thank-you !

Christmas morning, hot coffee, warm pancakes, sweet apple topping, and BACON! Perfect.

  23. wow i didn’t know that how they make baking powder!!! thanks! btw i love food too!!!!

  24. Actually, I think it’s a fairly balanced meal — meat/protein, grain/bread, and fruit. It might not be in perfect proportion, and could be a little bit heavy on fat or salt or sugar, but I think it’s a good idea.

  25. See the name of my blog? You’re killing me! LOL 🙂 I actually love making breakfast for dinner. I only see two pieces of bacon (er, protein) tucked in there, I think I can do that! Great blog and congrats on FP.

    • Your comment made me laugh out loud!!! Thanks so much for reading, and good luck with the 40 pounds! Nobody ever said you couldn’t make these pancakes with whole wheat flour and turkey bacon. And a little olive oil would substitute nicely for the butter.

  26. I just had pancake with scoops of ben and jerry’s cookie dough ice-cream drizzled with chocolate syrup but bacon pancakes!? That’s pure genious! I am gonna try making it.

  29. This Is My Cranky Face

I’m contemplating leaving work right now to go home and make these..

  30. Oh Yummy! My beloved boyfriend adores bacon, he gets it from a farm stand a little north of us and it is delicious. I’m going to try these pancakes with his delicious slab bacon, I’ll bet he loves them!
I’m a big fan of breakfast food anytime myself, when I get upset at work my boss gets me pancakes and sausage for lunch. 🙂 Happiness is a good boss and a full belly.

  31. roakian

YUM! I will definitely have to try adding bacon. I tried to make some apple pancakes a while back and they were pretty good (http://wp.me/p1bghx-A) but I think bacon would put them over the top!

    http://roakian.wordpress.com/

  32. Sounds good…like the apple topping! Yum! Bacon is fabulous and goes with EVERYTHING! Congrats on being Freshly Pressed!

another way to do sweet and salty is pancakes with grilled bananas, syrup, and bacon!
OR cheesy scrambled eggs and honey!
OR, if you just want the sweet, lots of lemon juice with sugar! makes it taste just like lemon cake.

the bacon and the lemon variations, i learned from my kiwi friends.
the eggs, i learned from mickey d’s. =)

    bon apetit!

  34. Margaret Ivory

    mmmm…..

  35. i also had pancakes with bacon today, my bacon was next to the pancake not in it, but i did make sure to have a little bit of each in every bite.

  36. One can never have too much bacon. Try to save some from Saturday morning breakfast (with pancakes of course) to make tomato bacon sandwhiches latter…never happens: )

  39. They look delicious… pancakes are one of my favourite breakfasts… I drizzle on it some honey and sprinkle some cinnamon, the besssstttt… One more thing, you said, you ate pancakes 3 days in a row , well, it’s a normal thing to me ‘coz we make a whole big batch that is enough for 4 – 5 days, and even the last day, I cant have enough… So you did gooooddd….. it is a comfort food…

  40. MaryAnn

That sounds like something I would make…get everything all together in one go…love it, LOL

Lovely recipe! I love your secret 🙂 It sounds very delicious!

  44. great idea!
well, just so you know, you dont really need baking powder to make great pancakes, eggs do just fine. in india, we have various kinds of pancakes, none of which use baking powder,….and they r still pretty great!
    🙂

  45. That sounds absolutely scrumptious!!!! Right now, you have created a craving so very serious!!! Now, in the middle of the office on a rainy day, how would i even start. And no store would have these….mmm.

Bacon can make the world spin…..at least in my hubby’s eyes. While reading your post he had just returned from a boy’s lunch out and he had had a mixed grill and he was on cloud 9. You do need something you consider soul food in such cold weather. I’m going to keep this in mind and make them myself as I do have a little bacon in the deep freeze and 2 granny smiths too.

  47. diveangel

there are a lot of sweet and salty combinations in the German food culture, so this is no strange combination for me 😉

  48. Anything with bacon is really good 🙂

  49. Looks yummy… Having pancakes with crispy bacon on top… thks.

  50. Thanks for sharing your secret.. Thinking about having mine too 😛

  53. im sorry but lol it sounds minging :L definately no judgement though as i like weird things, like supernoodle sandwiches :L hae fun making more recipes :L xxxx

  54. Pancakes and a secret……….can’t beat it….ours is pumpkin pancakes.

  55. I could easily eat pancakes a few days in a row, so only a grin, no judgments, from me.

Smart idea to put a secret surprise in these pancakes. Well done!

  56. managermamma

Here in Italy people don’t know pancakes, unless they’ve travelled abroad. I make them at least once a week, but I can’t eat them three days in a row:) Thank you for the baking powder tip, I need to keep a stock of cream of tartar, as I frequently run out of baking powder. Your pancakes look so delicious, by the way! Brava!

  57. Arlene

Wow, that sounds good, although I really don’t eat bacon. I am partial to a sunny side up egg on my pancake with maple syrup over which my boyfriend thinks is gross. It’s too bad they don’t have IHOP here in the UK. Unfortunately I can’t eat them too often anyway as I have a bit of a wheat allergy, but I might be able to do it with gluten free flour! 🙂

  58. Donna

What a fabulous idea!!!!!! You are my hero!!! I am trying this this weekend!

  59. just did this…it was as good as it sounded, and i cook like an asshole too.

  60. Um, yum?!? Ever heard of the doughnut shop that makes a maple doughnut WITH bacon bits sprinkled over top? You gotta have the salty with the sweet! Congrats on being FP!

  61. You are a genius! I’ve got to try this!
I usually turn my pancakes into bowlcakes (pancake batter goes into a microwave-safe bowl and cooked in the microwave because I’m kind of lazy like that), but I might do it the regular way just for this idea..although I can see it working for a bowlcake. mmmmmm

    http://tehcatspajamas.wordpress.com/

  62. I always eat bacon waffles with peanut butter on the side. ;o) It’s 01:38AM in my side of the world right now. Think I’m going to raid the fridge before I go to bed. ;o)

  63. I didn’t know that about baking powder; thanks! And now you have me craving pancakes. I’m a vegetarian so will leave out the bacon, but it still sounds delicious.

This post reminded me of my sophmore year in college. I lived on pancakes for more than a week, improvising on them just as you do here! Yummy creations! 😀

  65. The only thing that would make it more awesome would be dipping it in more batter and deep fat frying the whole thing. 🙂

  66. This looks like a tasty Christmas morning breckfast. Thanks for sharing and congrats on being freshly pressed.

  67. This looks fabulous! Thanks for the lovely idea – great for a family that believes bacon makes everything better. 🙂

  68. very daring & they sound very good. I will try these one day 🙂 genius.

  69. There is a restaurant where I live that makes bacon pancakes. They are divine. They also make bacon waffles, but I haven’t tried them yet. YAY for bacon! 😛

  70. Awesome recipe! Thanks for the tip of baking powder, that will defy itely come in handy!

  71. I love pancakes too. I like the idea of adding bacon to the pancakes. Sounds like a good idea for tonight’s dinner.

  72. Bacon in pancakes AND sauteed apples??? Brilliant! It doesn’t seem too big of a stretch….I mean for years they have all been served as breakfast together but I’ve never seen them mixed together into one pancake! This making me hungry!! Thanks for the post!

  73. My husband’s favorite food is pancakes! We make a dairy-free version that I will soon blog about and we top it off with a fried egg! Mmmm pancakes on a weeknight!

  74. Thanks for the baking powder substitution!
    Nice flapjacks!

  75. I’ve always loved pancakes with fried eggs (sunny side up), and bacon on the side. With lots of butter and syrup. But this — this is a revelation!

Just one critique: Only two strips of bacon?

  76. I did NOT need to see this today. Yummy idea!!!!!

  77. All I can say is everything is better with bacon. Well done.

Oh, and you didn’t have baking powder, but you had cream of tartar?!?! lol

  78. I wanted pancakes every day while pregnant and these would have made my head explode in the best way ever.

  82. A pancake with a twist….your twist seems really tasty. I cook pancake everyday for my breakfast but never have come up with this idea. I surely gonna try it out for myself….thanks for sharing it with us.

  83. The apple and maple syrup sound great. Might try it. But I have to put aside the bacon. I can’t eat it 🙂

  84. It’s so funny that I should run into your post…just yesterday, my oldest son suggested putting the bacon in the pancakes. I just bought maple flavored bacon, so I think I’ll give it a try this weekend.

    Congrats on being freshly pressed!

  85. autumn

Lecker, die muss ich unbedingt ausprobieren. 🙂

  86. This one will be added to my let’s-give-this-a-go list!
